Strawberry Galette

Looking for a fun and easy spring recipe to make with the kiddos? Baking/cooking is very therapeutic after all! Try this Strawberry Galette made with healthy and delicious California strawberries. California strawberries are now in peak season and are a great source of Vitamin C.

Ingredients:

2 cups all-purpose flour

1/4 tsp salt

2 tsp coconut sugar/stevia

1/2 cup cold unsalted butter cubed

4-8 tsp ice water

1/2 cup coconut sugar/stevia

2 cups sliced California strawberries

1 tbsp cornstarch

1/2 cup cream cheese

1-3 tbsp unsweetened applesauce

1 tsp vanilla extract

1 large egg beaten with 1 tablespoon heavy cream

Preheat oven to 350 F and line a baking sheet with parchment or Silpat. In a large bowl or food processor combine flour, salt, sugar and unsalted butter, while slowly adding ice water and forming dough into a ball. Shape dough into a thicker pizza pie form, wrap in plastic wrap and refrigerate for 30 min. In the meantime prepare your strawberry cream cheese filling by adding California strawberries, sugar, corn starch, cream cheese, applesauce and vanilla extract to a medium mixing bowl. Stir until combined and set aside. Lightly flour your work surface with a small handful and roll out your thicker circle-shaped dough with a rolling pin, into a thinner flat circle. Transfer dough to cooking sheet and start filling the centre with filling mixture, leaving a couple of inches all around. Once full, start folding edges up and over to create a barrier for the filling. Brush the galette with the beaten egg wash and bake for 30 min. or until golden brown.
