Healthy Mexican Pizza

This homemade Mexican pizza is delicious! It's one of our favourites that dad makes. He makes so many great ones, but this is the best! Made from all homemade ingredients (dough & sauce), we highly recommend you try this for your next meal. Even if you don't make everything from scratch. 😉

PIZZA TOPPINGS 🍕

Ground Beef Seasoned in Taco Sauce

Roasted Red Peppers

Spanish Onions

Black Olives

Monterey Jack Cheese

*To roast red pepper - cook whole pepper in oven at 400 for 40 min. Once done, take out of oven and place in a sealed plastic bag until cool (this helps the skin peel easily).

HOMEMADE PIZZA SAUCE

Chop 1 small onion and 2 cloves of garlic and sauté in olive oil on med. high for 5 min. Add 1 can of diced tomatoes (or 4 fresh tomatoes) and 2 TBS of tomato paste, 1/2 TSP of basil, 1/2 TSP of thyme, 1/4 TSP of oregano and dash of salt & pepper. Turn down heat and let simmer for 1 hour. Once done, run ingredients through blender.

HOMEMADE PIZZA DOUGH

1 Cup Lukewarm Water

1/2 tbs Yeast (or half a pack)

1 tbs Olive Oil

1/2 tsp Salt

1/2 Cup Multigrain Cereal

2 1/2 Cups All Purpose Flour

Preheat oven at 400. Let yeast sit in lukewarm water for 10 min. Once ready, mix water with oil and salt. Add the multigrain cereal and gradually add the flour until it's too thick to stir. Kneed dough. Kneed until dough is smooth and elastic. Cover with a tea towel and let rise for 45 min. Once ready, separate dough into 2 medium pieces (to make 2 medium pizzas). Flatten into round pizza shape with rolling pin. Let rise for 15-45 min. Depending on how thick you'd like your crust. Bake in oven for 8 min. (precook).
