This is a healthier version than what you may be used to. These Sloppy Joes are made with red kidney beans, mushrooms, green peppers, fresh tomatoes, a little bit of fresh parsley.... served on a whole grain kaiser. And are a whole lot delicious!
I started cooking almost everything in a cast iron skillet a couple of years ago. Everything tastes so much better and is much healthier. Try cooking your next meal in a cast iron skillet, I promise it won't disappoint. The only foods that are not ideal to cook in your cast iron skillet are sticky foods such as eggs.... making an omelette is nearly impossible.

They are loaded with fiber, protein, antioxidants, vitamins and minerals, such as copper, folate, iron, magnesium, manganese, phosphorous, potassium and zinc. Try to squeeze them into as many of your recipes as possible.
Chances are you're probably not eating enough beans. We should all be having at least 3 cups a week.

Olive Oil
Tofu or Extra Lean Ground Beef
Worcestershire
Garlic Powder
Onion Powder
Salt & Pepper
Paprika
Cumin
Cloves of Garlic
Freshly Chopped Parsley
Fresh Tomatoes Diced
Chopped Onions
Green Peppers
Mushrooms
Can of Red Kidney Beans
Ketchup
Salsa
Cheddar Cheese
Season beef with a few dashes of garlic & onion powder, paprika and salt & pepper. In a cast iron skillet heat about 2 tbs of olive oil on med. high heat. Once oil is heated, put ground beef in skillet and wet with a few good dashes of worcestershire. When your meat starts to brown, add your onion (1), green pepper (1/2), tomatoes (3), garlic (4-5 cloves), parsley & a few good dashes of cumin & stir. Wait 2 min. then add 4-5 chopped mushrooms and 1 can of strained red kidney beans, & stir for a couple of min. Add 3 tbs of Ketchup,1 cup of salsa & 1 cup of cheddar cheese. Cover w/ tin foil and turn off heat. Wait a few minutes before serving so that your final ingredients can absorb more flavour.
