Healthy & delicious homemade salsa!
Saute onions & garlic in saucepan until onions are translucent. Add tomatoes, beans, vinegar, sugar & spices. Bring to a boil, then simmer for 30 min. Add peppers & corn. Simmer for another 40 min. or until salsa is sufficiently reduced. Put in mason jars & refrigerate. Keeps for about 2 months. Bon Appétit!
3 medium onions diced
6 cloves of garlic chopped
3 cans of tomatoes or 12 fresh plum tomatoes
1 green pepper diced
1 red pepper diced
2 jalapeno peppers finely chopped
1 cup of canned black beans
1 cup of frozen corn (white or yellow)
1 tbsp of white vinegar
3 tbsp of brown sugar
1 tsp of salt
1/4 tsp pepper
1 tsp of cumin
1/2 tsp chili powder
1/4 tsp dried red chilies or 1 fresh hot red pepper
A few dashes of hot sauce
